Kitty’s cookie recipe

Since she’s got into The Great British Bake Off, Little Fish has really got into cooking. She bakes with her Dad, as I can’t cook for toffee.

Actually – that’s not quite true… I can bake these deliciously chewy gems of gorgeousness (the ladies at a recent coffee morning I went to described them as ‘addictive’ – you have been warned!)

You can use anything in place of the chocolate chips – I like using peanut M&Ms (but obviously, if you’re sharing, label them really well in case of allergies).

Here’s what you need:

125g butter
100g light brown soft sugar
125g caster sugar
1 egg, lightly beaten
1 tsp vanilla extract
225g self-raising flour
1/2 tsp salt
200g chocolate chips/M&Ms/smarties etc

Here’s what you do:

  • Preheat oven: 180C, gas mark 4
  • Cream butter & sugars
  • Combine egg & vanilla
  • Sift in flour & salt
  • Add choc chips
  • Roll into walnut size balls
  • Place on ungreased baking paper
  • Bake for 7 minutes for a super-chewy result (up to 10 for a more golden biscuit)
  • Take out & let them harden a little before moving to a cooling rack
